Defining it and diving into its history is Paul Freedman, Yale history professor and author of the new American Cuisine: And How It Got This Way and the acclaimed Ten Restaurants That Changed America. Freedman sits down with award-winning food writer Laura Shapiro (What She Ate; Perfection Salad; Something from the Oven) to talk about America’s vibrant and diverse—if not always coherent—culinary history over 200 years (gumbo … canned peas … chicken parm … kale salad …) and what it all reflects about our national identity.
