Virtual Nordic Cooking with Morten Sohlberg – Zucchini & Squash

Morten Sohlberg, the chef and owner of Smörgås Chef restaurant at Scandinavia House, will present an online demo of making one of his favorite late summer dishes — roasted zucchini and squash coated with ricotta, parmesan, and various herbs and spices. While taking you step-by-step through the process, he’ll also introduce you to Seven Ponds Farms, one of the two locations in the Catskills where many of the local, sustainable, and all-natural ingredients used in Smörgås Chef dishes are produced.
